Today is cooking day. I made a batch of red lentil soup and tried a different blend of spices. It is cooling now then I will refrigerate it. After that I might make a batch of split pea soup. I am going to try an roast some garlic in the microwave some time today.

I'm going to cook some more Napa cabbage to go with some carrots I have left over. Am also thinking of making a tortilla casserole today as well.

Made the casserole with corn tortillas, black beans, chicken, canned tomatoes, enchilada sauce and cheese. It turned out rather good.

My red lentil soup is on cooking now. It cooks for like 40 minutes. I am still tweaking the recipe. I increased the amount of red lentils this time to 2/3 cup. In some ways it is like split pea soup.

Just heated up half of the red lentil soup that I made yesterday for lunch. The thickness is perfect. Needs a little more tweaking of the seasoning.

With this one I used 1 tsp Curry Powder (yellow) and 1/2 tsp Ground Cumin. I'm not sure what to do next? Should I increase the curry powder or add something else?

I'm not sure. What I would do is look up some recipes online and see if there's one that sounds good.

Just heated up the rest of my red lentil soup for lunch. I'm going to try some PREMIUM minis crackers with it. I bought some ground ginger to try when I make the next batch. I was also thinking of trying it with nutmeg.

I am currently making another batch of red lentil soup. In this batch I have omitted the tomato paste and chicken broth. I am seasoning it with curry powder, ground cumin, and ground ginger. I decided to stop using tomato paste and chicken broth for what I think are good reasons. Chicken broth costs money and what you get for that is either nothing or less then nothing. Flavor wise you really don't get anything and nutrient wise you don't really get anything. I have been thinking about tomatoes and what my body tells me and what I know says that I at least should try to stop eating them. Pizza dreams is a misnomer. They should be called tomato dreams. I think tomatoes stress your body in some way and this is the way you body is telling you that.
